Recipe: Zesty Chicken Salad | Healthy Meal Option | Optislim AU

This  delicious salad is low in calories but rich in protein and fibre, making it an excellent meal option for weight management. The lime and cilantro dressing adds a refreshing zest without adding extra calories, while the variety of vegetables provides essential nutrients and keeps the calorie count down.

Ingredients:

  • 150 grams of cooked chicken breast, diced
  • 1 cup of mixed greens (spinach, arugula, and romaine)
  • 1/2 cucumber, sliced
  • 1/2 bell pepper, diced
  • 10 cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 2 tablespoons of chopped fresh cilantro
  • Juice of 1 lime
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 1/4 teaspoon of chilli flakes (optional for a spicy kick)

Instructions:

  1. Prepare the Salad Base: In a large bowl, combine the mixed greens, cucumber, bell pepper, cherry tomatoes, and red onion.
  2. Add Chicken: Toss the diced cooked chicken breast into the salad.
  3. Make the Dressing: In a small bowl, whisk together lime juice, olive oil, salt, pepper, and chilli flakes if using.
  4. Combine: Drizzle the dressing over the salad and toss everything together to coat well.
  5. Garnish: Sprinkle chopped cilantro on top for a fresh flavour boost.
