Ingredients (Serves 1):

  • 100g salmon fillet
  • 1/2 medium sweet potato (approximately 100g), cubed
  • 1 cup asparagus spears (approximately 100g)
  • 1 teaspoon olive oil
  • Salt and pepper, to taste
  • 1/2 teaspoon garlic powder (optional)
  • Fresh lemon slices (for seasoning and garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 200°C (400°F).

  2. Prepare the Salmon:

    • Place the salmon fillet on a baking sheet lined with parchment paper.
    • Drizzle the fillet with a little olive oil and season with salt, pepper, and garlic powder (if using).
    • Place a couple of lemon slices on top of the salmon.
  3. Prepare the Sweet Potato:

    • In a bowl, toss the cubed sweet potato with 1/2 teaspoon of olive oil, salt, and pepper.
    • Spread the sweet potato cubes on one side of the baking sheet (next to the salmon).
  4. Prepare the Asparagus:

    • Toss the asparagus spears with the remaining 1/2 teaspoon of olive oil, salt, and pepper.
    • Place the asparagus on the other side of the baking sheet.
  5. Bake:

    • Place the baking sheet in the preheated oven and bake for 15-20 minutes or until the salmon flakes easily with a fork and the sweet potatoes are tender. The asparagus should be crisp-tender.
  6. Serve:

    • Remove from the oven and plate your salmon, sweet potato, and asparagus.
    • Garnish with additional lemon slices or a squeeze of fresh lemon juice for added flavour.
