Baked Salmon with Asparagus and Sweet Potato

Ingredients (Serves 1):
- 100g salmon fillet
- 1/2 medium sweet potato (approximately 100g), cubed
- 1 cup asparagus spears (approximately 100g)
- 1 teaspoon olive oil
- Salt and pepper, to taste
- 1/2 teaspoon garlic powder (optional)
- Fresh lemon slices (for seasoning and garnish)
Instructions:

Preheat the Oven: Preheat your oven to 200°C (400°F).

Prepare the Salmon:
- Place the salmon fillet on a baking sheet lined with parchment paper.
- Drizzle the fillet with a little olive oil and season with salt, pepper, and garlic powder (if using).
- Place a couple of lemon slices on top of the salmon.

Prepare the Sweet Potato:
- In a bowl, toss the cubed sweet potato with 1/2 teaspoon of olive oil, salt, and pepper.
- Spread the sweet potato cubes on one side of the baking sheet (next to the salmon).

Prepare the Asparagus:
- Toss the asparagus spears with the remaining 1/2 teaspoon of olive oil, salt, and pepper.
- Place the asparagus on the other side of the baking sheet.

- Place the baking sheet in the preheated oven and bake for 15-20 minutes or until the salmon flakes easily with a fork and the sweet potatoes are tender. The asparagus should be crisp-tender.
